It’s pumpkin season!

Pumpkin and Squash

There are many healthy nutrients in pumpkins:

  • Carotenoids are antioxidants that give pumpkins the beautiful orange colour and protect your cells by neutralizing free radicals.
  • Lutein and zeaxanthin are antioxidants that neutralize free radicals in the eye and decrease the risk of developing blindness from cataracts or macular degeneration.
  • Iron is used by red blood cells to help transport oxygen to your cells.
  • Zinc is important for healthy muscles, bone, skin, and nails. It may boost the immune system and decrease the risk of developing certain cancers and other diseases.
  • Fiber is important for healthy bowel function.

Use the pumpkin seeds, too!
Think twice before you spoon out the pumpkin seeds and toss them to your compost! Pumpkin seeds have many nutritional benefits:

  • Pumpkin seeds are very high in protein. In fact, 1 ounce of pumpkin seeds has 7 grams of protein.
  • Minerals found in the seeds include copper, iron, magnesium, manganese, phosphorus, and zinc.
  • Pumpkin seed oil is high in phytosterols, which may help lower cholesterol levels.

What is your favourite squash/pumpkin?

My favourite squash is kabocha! It is very tasty: creamy, sweet, and less watery than other squashes.
