Blood concentrations of carotenoids are associated with reduced breast cancer risk. This was the conclusion of a recent, large systematic review by Aune et al. (2012).

Eat pumpkins, squashes, carrots, yams….. it’s the season!

We know that carotenes are found in orange vegetables and fruits, but many green vegetables also are great sources of carotenes.

Have you noticed that when your broccoli is aging, it turns a yellow-orangey colour? That’s because it contains carotenes! So, eat plenty of vegetables.

I used to be overwhelmed with all these research studies telling me to eat more of this and eat less of that…. But since I switched to a vegan diet, I know that avoiding consumption of animal products leaves me with the kingdom of fruits, vegetables, legumes, nuts, and seeds.

So, I’m not overwhelmed by the research anymore – bring it on! My lifestyle is being supported by scientific research!

For you out there: it is a big step to switch from consuming animal products to a vegan diet. But, is it a huge step to eliminate animal products from your diet for only 3 days a week? I call this eating in moderation.
